Pinterest Project #2 was a great success!
I wasn’t sure about this one when the recipe called for 4-6 jalapenos!
6?!
I used 3, and honestly…I think 4 would have been totally fine. I had originally had another project in mind, but I’m going to save that until we are back from the Holiday.![]()
I’m not a food photographer, but I do love to cook…and to bake. I love baking, I know that the cookies will always be gooey, the rice crispies will always be so so yummy (thanks to my grandpa!), and I make some awesome turkey tacos (thanks mom). But that’s it!
So, I have to challenge myself a little in the kitchen..
Here’s a link to the super yummy Homemade Chicken Enchilada Soup.
It made what seemed like a lot, but we’ve already eaten all of it…so I guess it wasn’t that much. A family of 4 could totally have this for dinner and it would be plenty, but I would add cornbread.
Cornbread would be best friends with this soup and best friends should always stick together!
Here’s what it came out looking likeĀ All topped with shredded jalapeno pepper jack cheese. ….Ok, I’m totally hungry again.

Here’s when it’s all gooey and melted and oh so good.

The only thing I changed, besides adding the entire bundle of jalapeno’s, was adding a can of kidney beans. It just didn’t seem right without them. I add kidney beans to just about everything. It all started with my moms’ famous salad which includes such ingredients as kidney beans (surprise!), strawberries, and feta cheese. Maybe I’ll share that one soon!
Happy Monday!
See you back here next week for project #3!!
